I work in professional kitchen since 7 years, my exeperience is based on working in Italian restaurant. I use to work around Italy, Australia and Thailand.
I like to make healthy menu ( ex. Salads menu, vegan and vegetarian menu ) or Italian menus following the real traditional way to make it; thanks to this I usually work and make fresh homemade pasta or I always try to do all by my self and only with fresh seasonal ingredients. I also work some years with a pastry chef in Italy so I can also do desserts ( tiramisù, panna cotta, custards, cake etc ).
